Easiest (and yummiest) cupcake recipe ever!

This is the easiest and yummiest cupcake recipe I have found (and I have tried a lot)!
2 eggs
vanilla essence
3/4 cup caster sugar
1 cup self raising flour
Into a 1 cup metric measuring cup place 2 eggs
fill to the top with thickened cream
Beat 1 minute.
1 splash vanilla essence
3/4 cup caster sugar
Beat 3 minutes
Sift 1 cup SR flour into bowl and fold into mixturePlace in 12 patty pans
Bake in moderate oven (180 degrees) until light golden and cakes spring back when lightly touched in the centre.

*If you are watching your weight, you can use Equal or Spenda artificial granulated sweetener and light or extra light cream instead.
*Gluten free flour can be used in place of regular SR flour if need be.
I use a cup of pure icing sugar with a tiny bit of butter or you can use milk… I recommend making it on the dry side, so it doesnt run!
Multix make a pack of disposable icing bags with nozzles for about $3 at Coles and they are so easy to use!! Or you can cheat and buy the ready made Betty Crocker icing. 😉
