Easiest (and Yummiest) Cupcake Recipe Ever!

Although the cupcake boom peaked a few years ago, these scrumptious little cakes are still as popular as ever with kids and the young at heart a like! A good basic vanilla cupcake recipe is a must in anyone’s repertoire. This one is not only super simple but also incredibly reliable. Honestly, you can’t muck it up!

This is the easiest and yummiest cupcake recipe I have found (and I have tried a lot)! It’s super speedy and is perfect for when you’re in a hurry. Pop them in the oven and you’ll have a yummy treat in twenty minutes.

Cupcakes
Ingredients:
2 eggs
cream
vanilla essence
3/4 cup caster sugar
1 cup self raising flour
Method:
Into a 1 cup metric measuring cup place 2 eggs, fill to the top with thickened cream and place in a bowl.
Beat the eggs and cream for 1 minute.
Add
1 splash vanilla essence
3/4 cup caster sugar
Beat for another 3 minutes
Sift 1 cup SR flour into bowl and fold into the mixture. Using a tablespoon, place in 12 patty pans
Bake in moderate oven (180 degrees) until light golden and cakes spring back when lightly touched in the centre.
*If you are watching your sugar intake, you can use Equal or Spenda artificial granulated sweetener. Instead of regular cream, you could use a light or extra light cream or milk instead.
*Gluten free flour can be used in place of regular SR flour if need be.
Icing:
I use a cup of pure icing sugar with a tiny bit of butter or you can use milk… I recommend making it on the dry side, so it doesnt run!
Multix make a pack of disposable icing bags with nozzles for about $3 at Coles and they are so easy to use!! Or you can cheat and buy the ready made Betty Crocker icing. 😉
