All in one Quiche

Our go-to recipe for an easy mid week meal is the All in One quiche recipe I found on the Taste website many years ago.

The best thing about it, is the recipe can be altered to suit whatever you have in your cupboard at the time. For instance, last night instead of the chicken and tomatoes, I added a tin of tuna and a grated carrot. Both of which went incredibly well with the corn and onion.

In the past I’ve used bacon instead of the chicken, a tin of tuna, left over frozen stir fry vegetables (it actually worked really well, surprisingly), left over roast meat instead of the chicken, there are literally hundreds of different ingredients and combinations you could use in this recipe.

Best of all, the kids love it and it is relatively cheap to make especially if you use season vegetables or leftovers.

To change the recipe to suit your own needs, do the first two steps of the method and then add whatever ingredients you want or have.

All in One Quiche recipe:

    3/4 cup plain flour
    1 teaspoon butter, softened
    3/4 cup grated cheese
    4 eggs, lightly beaten
    1 cup milk
    310g can corn kernels, drained
    1 onion, finely chopped
    2 tablespoons basil, chopped
    1 small barbecued chicken, skin removed, meat shredded
    1 tomato, deseeded, diced
    1 tablespoon flat-leaf parsley, chopped

Method:

  1. Preheat oven to 180°C. Lightly grease a 3cm deep, 24cm (base) quiche dish.

  2. Combine pastry mix, cheese, butter, eggs and milk in a bowl. Stir well.
  3. Add corn, onion, basil, chicken, tomato, parsley, and salt and pepper to egg mixture. Mix well. Pour into prepared quiche dish. Bake for 40 to 45 minutes or until golden and firm to the touch. Serve.

Any voila! How easy is that to make? You can serve the quiche with salad or homemade wedges (simply cut potatoes into wedges, pop them on a tray, spray them with olive oil, sprinkle over some dried Italian herbs for flavour and cook at the same time as the quiche).
